Hamner Springs is lovely on the South Island near one of the passes from Christchurch to the West Coast across the Southern Alps. Its a series of hot pools, outside that you can relax and chill in, they have small booths where you can have a pool to yourself, also naturally heated pools. It was about £3ish when we went in 2003.
Hokatika on the West coast is home to the greenstone (aka Jade) so good for a bit of jewelery .. but its bad luck to buy it yourself.
If you get a good night ... look for the southern cross. We had a lovely clear night in Fox, home of the Glacier.
Foodwise, we often went for pie & a bottle of drink from the many bakeries of NZ. The pies are lovely and fluffy puff pastry and not at all greasy and stodgy like UK ones. Best we had were at Hamner Bakery ... Thai Curry, Chicken, Cranberry & Camembert etc... and lovely rocky road slice.
Drink the 'local Produce' i.e. wine & beer ... canterbury draught in the south & tui in the north on the beer front, Malborough & Hawkes Bay for the wine. Many wineries have restuarants attached so decide who will be DES!
Waitomo Caves for the gloworms, bit touristy but the glow worms are cool ...
Can't think of much else at the mo.
Pizza at Wanaka - Chicken, Cranberry and Brie.
Fush & Chups - kumara chups are great.
Oyster and Steak Pie in Napier - and all that great Art Deco.
Actually, and moving away from food for the moment, anything is fun and you really don't have to plan ahead, since it is all so easy.

Ooh yes, kumara (aka sweet potato) its everywhere in NZ, and very yummy.
